Special surprise recipe! Chicken Piccata

During this pandemic, I've been cooking more than ever before, trying new recipes and actually enjoying cooking!  What???  My friends know that I've never been interested in culinary art, but now, I'm searching for things to fill my days, and since my husband and I used to love going out to eat, this is the next best thing till this pandemic is over!   We often cook together too, which I have to admit, I'm hoping Dick will love it so much that he will take over someday. (wink, wink)  I've decided that from time to time, I will be sharing some of my most favorite recipes.  And as a bonus, I am adding one of my latest paintings, just for kicks.  This painting is available for the first person to text me for only $50, half of my usual price!  This chicken dish is a combination of many different recipes that I found online, and I concocted my own version, based on our own tastes.  Hope you enjoy it!

"Chicken Piccata"



6 chicken thighs 

Flour (optional)

1/2 t. Kosher salt

1/2 t. Black pepper

3 T. Butter

1/2 c. Dry white wine

1/4 cup Capers, drained

3 or 4 t. minced or chopped garlic

1/3 t. thyme 

1 T corn starch

3/4 cup chicken broth

3 T. Fresh lemon juice and sliced lemon

3 Chopped green onions


Preheat oven to 400 degrees.  Optional:  Coat chicken with flour lightly, if preferred.  Sprinkle chicken with salt and pepper.  Heat a skillet over medium high heat.  Using 3 T butter to pan, fry chicken for 5 minutes.  Turn chicken over. Cook 2 - 3 minutes.  Remove chicken from pan and place them in a 9 x 13 pan.  Baste chicken with some of the butter that is still in the skillet.   Add corn starch, wine, capers, garlic, 2 T. lemon juice, and thyme to skillet.  Cook 2 minutes till slightly thicker.   Add sauce to 9 x 13 pan, but try not to pour over the chicken, so that the chicken will remain crispy on top. Bake for 30 - 35 minutes till internal temp of the chicken should register 190- 200 degrees. (I put loose foil on top of the pan for the first 15 minutes, then removed it for the last 15 minutes to allow the chicken to get crispy.  Sprinkle evenly with green onion, garnish with sliced lemons.  Serve over jasmine rice.

Living your Best Life- Finding Balance!

Full disclosure:  I've started a new diet and welcome you to join me if you feel so inclined.  I've let myself go due to stress, poor management of time, and disorganization.  So, I'm eating mainly protein and green vegetables now.  Hoping to get the sugar cravings out of my head!  This is DAY 2 and I'm feeling empowered!  So far, so good!  It just feels so good to have a plan.  The other promise I've made to myself is to take a 30 minute walk EVERY DAY.  No excuses.  Just do it.  I always feel better afterwards, and we have so many beautiful places here in Minneapolis to walk.  Yesterday, I walked in Excelsior, along Lake Minnetonka and it felt so good to be outdoors in the open air, watching a guy throw a frisbee for his dog to retrieve, seeing young families at the beach....and even getting a little out of breath felt good! By the way, have I mentioned that our daughter is getting married in a month, so that deadline is a great motivator for me too!  :)  My master plan includes staying busy and trying to organize and think ahead.   Many new paintings will be done, I'm sure!  I make a menu for the following day, so I'm one day ahead.

My studio is being prepared for 2 upcoming home studio workshops that I will be teaching next week.  Little abbeys are so fun to paint and they really teach me to think of the important design principles of a painting.  They are my warm-ups when I haven't been painting for awhile.  If you'd like to get on my student list, send me your email, and I will inform you of future workshops.

30 Paintings in 30 Days Collage

Well I made it!   But I have to say this was my hardest 30 in 30 that I've ever done!  So many things on my calendar during February and my pride got in the way, so I really tried my best.  No 5 minute paintings here!  Most of these took 4 - 6 hours to complete. This was supposed to be abstract collage, but I diverted from that style as the 30 days progressed.   Below are the only ones that are not sold.  If you are interested, be sure to contact me BEFORE March 15th,  when the 30 Day Sale will be over.  Right now, these are available for $75 each, but after March 15th, they will go back to regular prices.

Day 21 of 30 Paintings in 30 Days!

I started this painting several days ago, and then didn't quite know what to do with it.  Sometimes, paintings need to brew awhile to tell you what they will become.  I had tried a new technique when I started, and it really had me scratching my head on where to go.  I had collaged 1/2 of a butterfly, and decided to wire draw some more butterflies to accompany the first one.  Whenever I teach, I tell the students not to use the whole image that is on napkins.  Only use a part of the napkin image and then add your own touch to it.  Make it your own.   Once I added the red unifying color to weave around the butterflies, it all came together.  Just goes to show that if you try new things once in awhile, you might make a breakthrough.  Below is my beginning.

Slaying the Dragon

This painting took me 4 days to complete.  I whined all the way through it! 'as I tell my students who whine,  "Would you like a little cheese to go with that whine?"   It was truly a lesson in perseverance.   There were so many times when I wanted to quit and make it into a journal cover, something I do with my rejects.  But this voice kept telling me that my best paintings are the ones that involve a struggle.  When this happens to you, here's my advice:  
1.  Ask yourself why you are painting this.  Be sure to get that message across to the viewers.
2.  Keep telling yourself to have fun!  Learn from your mistakes and go forward a wiser person.
3.  Draw a value sketch if your design is faltering.
4.  Remember my 3 words:  Repetition, Variation, and Dominance.
5.  Take photos of your painting in progress.  You will see values lots better in the tiny screen.

Now, that I'm finished, I'm so glad that I continued the good fight and truly did slay that dragon!!! This painting is for my solo exhibition in Miles City, MT at the Waterworks Museum on Oct. 15 - Nov. 10th.  My opening reception is on the 15th at 1:00.  Everyone is invited to attend!

Sorry it's been so long since I have blogged.  It's been a busy teaching schedule and it's hard to keep up with everything!  Check out my website for future workshops!
